Butternut Squash Noodles with Lemon Tahini Dressing Recipe 🍋


Ingredients:

- 2 cups butternut squash, spiralized

- 1/2 cup cherry tomatoes, halved

- 1/4 cup sliced red onion

- 1/4 cup chopped fresh parsley


For the dressing:

- 1/4 cup tahini

- 2 tablespoons lemon juice

- 1 tablespoon apple cider vinegar

- 1 clove garlic, minced

- 1 teaspoon maple syrup

- Water as needed to thin

- Salt and pepper to taste


Instructions:

1. Use a spiralizer to turn the butternut squash into noodles.

2. In a small bowl, whisk together the tahini, lemon juice, apple cider vinegar, garlic, and maple syrup. Add water to achieve the desired consistency.

3. Toss the butternut squash noodles with the dressing.

4. Add cherry tomatoes, red onion, and parsley.

5. Season with salt and pepper and serve immediately.
