Vegan Chickpea Salad Wrap Recipe
Ingredients
1 can (15 oz) chickpeas, drained and rinsed
2 tbsp vegan mayonnaise
1 tsp Dijon mustard
1/4 cup diced celery
1/4 cup diced red onion
1 tbsp lemon juice
Salt and pepper to taste
4 large lettuce leaves or tortilla wraps
Optional: chopped fresh herbs (parsley or dill)
Instructions
1. In a medium bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
2. Add the vegan mayonnaise, Dijon mustard, diced celery, red onion, and lemon juice. Mix until well combined.
3. Season with salt, pepper, and optional fresh herbs.
4. Spoon the mixture onto lettuce leaves or tortilla wraps.
5. Roll them up tightly and enjoy!
