Vegetarian Pot Pie Recipe 🥕 


Ingredients:

- 1 cup vegetable broth

- 1 cup heavy cream

- 1 cup diced carrots

- 1 cup diced potatoes

- 1 cup chopped mushrooms

- 1 cup frozen peas

- 1 onion, chopped

- 3 cloves garlic, minced

- 1/4 cup flour

- 1/4 cup butter

- 1 tsp thyme

- 1 tsp rosemary

- Salt and pepper to taste

- 1 package puff pastry

- 1 egg, beaten


Instructions:

1. Preheat oven to 400°F (200°C).

2. In a large pot, melt butter over medium heat. Add onion, garlic, carrots, potatoes, and mushrooms, cooking until softened.

3. Stir in flour and cook for 1 minute.

4. Gradually add vegetable broth and heavy cream, stirring constantly until thickened.

5. Add peas, thyme, rosemary, salt, and pepper. Mix well.

6. Pour mixture into a pie dish and cover with puff pastry. Trim excess and crimp edges.

7. Brush with beaten egg and cut a few slits in the top.

8. Bake for 25-30 minutes, until golden brown.
